For the Raspberry Cold Foam:

Optional Garnishes:

  • Whipped cream (optional for topping)

  • Fresh raspberries (optional for garnish)

  • Dark chocolate shavings

Instructions

Step 1: Prepare the Raspberry Syrup

  1. In a small saucepan, combine the fresh raspberries, honey or agave syrup, and water.

  2. Heat over medium-low, stirring occasionally, until the raspberries break down and the mixture thickens (about 10 minutes).

  3. Strain the raspberry mixture through a fine mesh sieve into a bowl to remove the seeds, pressing down with a spoon to extract as much liquid as possible.

  4. Set the raspberry syrup aside.

Step 2: Melt the Chocolate

  1. In a double boiler or a heatproof bowl set over a pot of simmering water, melt the chopped dark chocolate bar. Stir frequently until smooth.

  2. Remove from heat and set aside.

Step 3: Make the Mocha

  1. Brew your espresso or strong coffee and set aside.

  2. In a small saucepan, heat the milk over medium heat until hot but not boiling.

  3. Stir in the melted dark chocolate and cocoa powder (if using) until fully combined and smooth.

  4. Add the brewed espresso or coffee, 2 tablespoons of raspberry syrup, and vanilla extract. Make sure to stir well to combine!

  5. Let cool.

Step 4: Prepare the Raspberry Cold Foam

  1. In a small jar or milk frother, combine the cold milk, raspberry syrup, and heavy cream (if using).

  2. Froth the mixture until it becomes thick and foamy. If using a jar, shake vigorously for about 1-2 minutes.

Step 5: Assemble the Raspberry Mocha

  1. Fill your favorite glass with ice.

  2. Pour in the raspberry mocha mixture.

  3. Top with the raspberry cold foam.

  4. Garnish with whipped cream, fresh raspberries, and dark chocolate shavings if desired.

  5. Serve immediately and enjoy!

Tips for Customization

  • Sweetness Level: Adjust the amount of honey or agave syrup in the raspberry syrup to suit your taste.

  • Extra Chocolatey: Add an extra tablespoon of cocoa powder to the mocha mixture for a richer chocolate flavor.

  • Stronger Coffee: Use cold brew coffee instead of espresso for a smoother and stronger coffee flavor.
